A great way to use those just picked from the garden tomatoes! This is a wonderfully simple, colorful, and deliciously easy to assemble salad that originated in Capri. Always use fresh mozzarella and ripe, firm to the touch tomatoes; both should be close to the same size in diameter and thickness. In Capri, they begin and end the salad with sliced tomato. I have no idea why, but as they say, “when in Capri…!”
In the next step, roll up several fresh basil leaves, and with a sharp knife, cut them into ribbons. Top your sliced tomato/mozzarella with the basil. Finish with a sprinkle of salt and pepper to taste, and a generous drizzle of extra virgin olive oil and balsamic vinegar.
